  Profitable Production of Specialty Mushrooms on Substrates Available in New Brunswick

Abstract: A method for growing specialty mushrooms on sterilized, supplemented maple or birch sawdust from N.B. sawmills was developed. Emphasis was placed on shiitake (Lentinus edodes) since the market size and price for this mushroom is good. After considerable experimentation with medium composition and growing conditions, high yields were attained. However, variability in yield remains a problem. Modifications of the method were also used to produce maitake (Grifola frondosa), oyster mushroom (Pleurotus ostreatus, P. citrinopileatus), lion's mane (Hericium corraloides) and reishi (Ganoderma lucidum). Interest in all of these specialty mushrooms is rising due to their good flavor and/or nutriceutical value.
